We didn't let bonuses stack.  Highest bonus applicable adds to the roll.

I think my ideal situation would be bonuses and penalties associated with each career. For example, maybe the barbarian gets a bonus to melee combat but a penalty to defense and ranged combat, while an archer would get all of his bonus lumped into ranged combat.

Another way to handle that would be to treat it like a boon.  Let the player with the associated career roll an additional die and take the results of the two highest.
