Thanks to Final Fantasy, Avatar the Last Airbender, World of Warcraft and a few others, big flightless birds have probably left the realm of "unusual mounts", but they're a classic for a reason.

Giant lizards or snakes can also be fun, particularly in a desert.

I was using flightless birds in '83. Which I think pre-dates those properties.

Back when I played the D-series, our PCs acquired about twenty of those riding and pack lizards from the Drow that we killed along the way. Not only did they make it easier for the main party to travel through the underworld tunnels, but they increased the loot the PCs were able to bring back.

In another campaign our party was gathering up huge amounts of gold and ivory in a far away quasi-East African adventure (the DM figured all those elephant tusks would be big problem to transport from the graveyard in the interior back to our ship 100 miles away). After killing off a bunch of gnolls, ghouls and demons, sacking their temple and gathering scores of tusks (in addition to all the other loot), we realized we didn't bring nearly enough pack animals (almost all of which were killed, except for an elephant, who abandoned the party for taking tusks as treasure).

So the Druid (my PC) and the party's Ranger flew off to find another form of transport. We found a large herd of zebras, used our magic, and got them to carry the stuff to the nearest river that we could use barges on. It was tough going, with numerous attempts to grab our barges, but we returned with most of the loot and few casualties.

A little resourcefulness can go a long way when it comes to mounts and pack animals. A druid can turn this up to 11.

Glorantha had bird mounts, and also bison mounts. Both are cool!

In one of our old campaigns, we had a Minotaur who rode a stegosaurus named Fifi, a duck who rode a dog, and a morokanth who rode a giant war slug - it was pretty slow but was great at climbing over battlements.

Our current campaign is less odd, so the strangest mount is a rhino made of living copper.

In the FtA!GN! setting there was a region where there were Giant Chickens, that could theoretically be used as mounts, though that never ended up happening in any of the FtA games I ran.
