I keep seeing this being said, but I remember a GURPS fan complaining that other systems didn't have a horse v human acceleration per second comparison like GURPS does...

GURPS is a toolbox with a giant ass-load of options. You could (unwisely) decide to turn them all on... or... you could start with the basic core and only turn on more details as you want/need them.
I guess there are some people who might be insecure and feel they're not playing the 'real' GURPS if they don't engage with ALL the content.

Okay, here's my recommendation: Create characters in Savage Worlds, then play them in Fudge.  It's almost a perfect match, honestly.   Skill dice become Fudge rankings, with d4 being Mediocre, d6 being Fair, etc.  Bennies become Fudge Points.  SW bonuses and penalties are cut in half.  Armor and weapons require a little more effort to convert, but not a lot.

Personally I prefer combat resolution to be as simple as possible so I run Fudge Lite, but Savage Worlds maps a little better to the slightly crunchier original Fudge rules.

Yeah, believe it or not I have already gone this rout, using SW as template to build a fudge game.  I like fudge, it is a good solid traditional-style game, but it has it's mechanical wonkyness too - namely the extremely chunky granularity of 4df.  It is better with d6-d6 (like Starblazer, or Anglare), but then 2d6 is just easier, and then why not expand the grain with 2d8 or 2d10 or just use one of many great 2d6 engines like Traveler or BoL... and so on?  I never got the project off the ground.
