GRR Martin will definitely die before the books are finished.  He's already turned his attention to another TV Series and comic books.

Thankfully, the producers of the show have already received answers from him on how the series finishes.

For the end of the series, I expect it'll either diverge pretty strongly from the books or come across as a bit duex ex machina-ish since they're stripped out a lot of the supernatural elements that I expect to become more important as the series gets towards the conclusion.
