Pork chops in pear sauce with squash dumplings in brown butter on the side. It was the first time I've made any of these dishes and to my relief it was tremendous. It was all about trying something new.

That's what I found surprising. It was an internet recipe. I've had middling luck with them in the past, but this one's pretty good.

I'm sure.

I would place the chop in the center of the plate, and arrange the dumplings around it.  And garnish it with something green, like parsley.  The parsley is very cliche.

And serve it on a red plate.

I don't give greens the attention they deserve, but I am working on it. Right now I'm trying to expand my food horizons by going after recipes that seem friendly to my tastes. The dumplings are the first time I've had squash that wasn't pumpkin pie for example.

And while it isn't green. I'm on the lookout for a killer beet salad to give beets a fair try in the future.

After that, maybe I'll give greens some attention.

Just get yourself what ever's cheapest at the shop (usually it's beans or broccoli for us) and steam a bit to go with your protein, carbs and fat. Or make a salad if you swing that way. Your body will thank you for it.

Beets are good just boiled if you want to try them. Much better than the canned ones. They would be very tasty with your pork chops.

Well, but that's chimichurri.  That's different.

Which reminds me of the wonderful cilantro lime pesto my former favorite upscale Mexican/Peruvian establishment served with their chips.  That was one yummy green sauce.
