Well, Game of Thrones, obviously, the first three or four seasons at least.
The recent Borgias series with Jeremy Irons could give you a good look at intrigue in the Church of the Unconquered Sun among the Arcadian city-states.
Kingdom of Heaven is crap theology, but great music, slice-of-mediaeval-life and battle sequences.
Vikings is quite a bit earlier than the Dark Albion period, but has lots of good stories about personal passions playing into political fallout, as well as great Christian vs. pagan clashes. The Tudors was done by the same creator (Michael Hirst), but I haven't seen that one so I can't speak to how useful it would be.
There's a series called The White Queen on Starz, based on the Philippa Gregory novels about the women of the Wars of the Roses; I haven't seen that either, but it was nominated for a bunch of awards, so it may well be worth watching.
