Adobe Creative Suite (InDesign, Illustrator, Photoshop, Acrobat, etc) is the industry standard; however they are not the only viable options. Scribus is an open-source page layout program that is good enough, if a bit frustrating due to inconsistencies in the the UI. GIMP is an open source image editor that is good enough for professional work. Inkscape can be used in place of Illustrator, but my experience of it has not been productive. There are others, as well. I think Quark still makes QuarkXPress, though I haven't used it in 20 years or more.
I'm currently evaluating Scrivener. So far, so good. In the past, I've relied on programmer's text editors, like BBEdit for all text.
